Lettuce:
Romaine
Tall Towers
Romaine lettuce, tall towers variety is a type of lettuce that is grown for its tall, upright heads. It has dark green leaves that are crisp and tender. Romaine lettuce is a good source of vitamins A, C, and K, fiber, and it is low in calories and fat. It is a versatile vegetable that can be eaten raw in salads, or it can be cooked, such as grilled, sauteed, or roasted.
Little Gem
Little Gem has a nutty-sweet taste and a thinner, crunchier stem. Little Gem has a pale green heart and a crunchy center and a sweeter taste. With a high-water content and minerals and vitamins, such as potassium, magnesium, calcium, vitamin A in the form of beta-carotene and B vitamins, especially folic acid and vitamin C.
Butter/Bibb
Mirlo
Large bright green butterhead lettuce. The bright green color makes this variety look fresher. It is an excellent source of vitamin A, vitamin C, vitamin K, calcium, and iron, which help fortify bones and fight off inflammatory diseases.
Buttercrunch
Buttercrunch forms dark green leaves and small compact hearts. Soft, buttery texture yet crisp and sweet. Forms a small, open but tightly bunched, 6" rosette that is fan-shaped rather than round. It is a popular choice for salads, sandwiches, and wraps.
Butter lettuce is a nutritious leafy green that's rich in vitamins A and K, as well as folate, iron, manganese, and potassium. Butter lettuce also contains a group of potent antioxidants called carotenoids, including beta carotene, lutein, and zeaxanthin.
Leafy Greens:
Arugula
Arugula is a versatile, leafy green vegetable that has a peppery flavor and can be eaten raw or cooked. It is often used in salads, sandwiches, and pasta dishes. Arugula is a good source of vitamins A and C, as well as fiber. It is also low in calories and fat.
Chard
Chard contains 13 different types of antioxidants, including betalain, beta-carotene, and vitamins C, E and K. Chard is also a good source of Iron, Fiber and Vitamin K.
Herbs
Basil
Genovese basil has a strong, bold flavor with hints of pepper and clove. Its large, tender leaves are oval-shaped and about 2–3 inches long. Genovese basil is also known for its pungent aroma and is often used in cold dishes like pesto and salads, as well as soups, pasta sauces, stir-fries, and even desserts.
Cilantro
Fresh cilantro has a complex flavor profile that's a mix of lemon, pepper, and pungency.
Parsley
Parsley has a fresh, clean, and slightly bitter taste with hints of mint and citrus as well as a peppery, earthy flavor.
Sorrel
Sorrel is a vibrant leafy green used to add a sharp, citrusy flavor to soups, sauces, salads, and beverages. It has a sour, lemon-like flavor and is often featured in dishes like soups, stews, and curries. Sorrel is also rich in antioxidants and touted to promote healthy digestion and decrease inflammation. Sorrel is low in calories but high in essential nutrients like fiber, magnesium, and vitamins C and A.
